I enjoy waterfowl hunting on many levels, and this includes preparing one of my favorite meals; smoked and roasted duck. I painted for Don Thomas’ closing column in Ducks Unlimited magazine, and one particular column expounded the joys of eating wild duck. It was all the excuse I needed to pull a couple of birds out of the freezer!
